If it's showing an NEF icon placeholder then it would seem to indicate that the extension is correct, already, wouldn't it?
Perhaps the change in Bridge was whether to render high-quality thumbnails or not:
Preferences / Thumbnails
The Quick thumbnail would be extracted from the NEF, and the High-Quality thumbnail would be rendered via ACR and shown as the NEF.
The fact ACR continues to work is a little odd, so I wonder if there are two versions of it, somehow, and one is too old to render the thumbnail while the other is being used by Open in Camera RAW.
You can check if you have two versions by going to Photoshop and doing Help / About Plugins and seeing how many Camera RAW items are listed. There should be only one.

When in Bridge, select all the photos, then go to Tools > batch
rename. When renaming the photos, be sure to add "New extension" and
type in the NEF ext. and see if that will solve the issue. Sometimes
when I've renamed a batch of photos and don't specify the ext., it
gets left off and they don't show up. By renaming and adding the ext.
it has solved the problem. Not sure it will help you, but give it a
try.
